I have been looking for a 68 Coupe model for awhile. The only ones I have found are California Specials.
You'll have to do a little modification and also buy a fastback kit for the floor, etc. but here is a '67 kit that I bought a few years back. When I decide what my car will ultimately look like and is done...I'll assemble and modify.

Yeah. They use a process to basically cut a thin piece of metal with parts that are scaled to the size of the model. In this case, it's 1:25 scale. I'm not exactly sure how it works but you get a huge amount of tiny detail parts on a small card that u can paint and glue to your model to make it more realistic than the plastic molding process will allow. I think the 65-66 version has emblems and side ornaments, 2 styles of grill, etc. They also make engine parts and bolt heads and multi part wheels and any numerous pieces to help detail the model car.
