Smoking cheese. What's your favorite?

I've done quite a few lately: mozzarella white cheddar pepper jack and an Irish cheddar


What does your family like? Definite divisions in the house. My wife is a mozzarella only lover along with one daughter The others like the jack and white cheddar or the Irish cheddar. The white and pepper jack were Tillamock

I do 40% mild cheddar, 40% Jack, 20% Mozzi. Sometimes toss in some pepper Jack.

Munster, Gouda and mozzarella. Then Cheddar.
