What coolant temperature for a 347 stroker?

What should be my target engine coolant temperature for a 347 stroker?

I've got a 180* thermostat and a good electric fan. When the fan comes on it will drop the temperature 8*. I can set the electric fan to come on when ever I want.

Right now I have the fan set up to come on at 200*, once the temperature gets to 192* the fan kicks off. Is this a good range or should I raise or lower the operating temperature?

The very original Ford thermostats were designed to open at 198*, but most people nowadays run 180* thermostats.  Sounds to me that you have good numbers right now.  So long as your engine temperature doesn't creep up, you'll be fine.
