Cooked a pig this weekend....

Well the first time I've actually cooked a pig myself. My family has been doing forever. New it's up to new and my brother to carry on the tradition. We use oranges, lemons, garlic, salt, pepper, and oregano as the marinade.

Excellent! I will be barbecuing one in October. I typically do a few each year. Great for parties!
 
So I have to ask. What is your family heritage? Your post makes it sound like roasting/serving a pig is a big deal. When I was younger I had quite a few Filipino friends and they would always serve roasted pig at family gatherings. They used to fight over who got to eat the meat off the pigs head! I once saw brothers actually come to blows over an ear! I thought that was very strange.
 
Well we are not that crazy, someone would have gone after the other ear. My family is from Cuba, we usually do it every Christmas but we wanted to make one this summer. We usually build a box and it takes 8 hours to cook because how inefficient it is.

We bought this box called "The Caja China" it cooked it in 4 hours. It's acts like over in the box. The box is supposed to last 15 years but I'm probably going to build my own out of diamond plate when this one gives up.
